A press release from the National Academies reveals that Americans experience higher rates of disease and injuries. From the consensus report abstract: "The United States is among the wealthiest nations in the world, but it is far from the healthiest. Although Americans’ life expectancy and health have improved over the past century, these gains have lagged behind those in other high-income countries. This health disadvantage prevails even though the United States spends far more per person on health care than any other nation. A Little Weight Not So Bad.

January is the worst month to hit the gym. It seems like everyone has made the same resolution that they make year after year: to lose weight. However, new evidence shows that a little extra weight is good for longevity. This doesn't mean it is okay to be morbidly obese, but it means if you are carrying some extra weight and your health indicators are good, you may be living a longer life. The findings suggest that those in the overweight category (BMI 25-29) actually lived longer than normal weight. January 1, 2012 we started this blog. It is our one year anniversary already! Despite being around for a year now, for just about a months or so we have been on hiatus from writing (mostly due to busy schedules and other happenings). Now that it is 2013 and a new start of the year, it's back to business. Our month off did not stop us from staying healthy and trying out new recipes. Every single day I am thankful for many things in my life. For me, Thanksgiving is everyday and not just one day a ear to say thanks. However, I hope this holiday stands as a reminder to be thankful for what we have. I was curious about the history of the actual holiday and discovered it did not become an official holiday until Lincoln's presidency. The history of Thanksgiving Day. Raw Cashew Cheese (vegan, soy-free, gluten-free)

I have numerous requests for my raw cashew cheese recipe, so here it is! Don't let the name, cashew cheese, fool you, as it is dairy-free and contains only raw cashews and probiotics. It's cheese in the sense that it is cultured and has a thicker consistency. you can experiment with fermentation times, but I wouldn't allow it to ferment for more than 48 hours unless you are experienced with culturing/fermentation. Daylight Saving Time

It's that time of the year again, daylight saving. For some reason I always love falling back instead of spring forward. Tonight at 2 am make sure to set the clock back. Day light saving, or summer time (in some countries) is observed in almost every country, excluding some parts of Africa and south pacific areas (and Arizona). The rules: Spring ahead begins at 2:00 a.m. on the second Sunday of March. Fall behind ends at 2:00 a.m. on the first Sunday of November. Read more here. Paul Rozin, a professor of psychology at the University of Pennsylvania, conducted a study (1999) about the attitudes and role of food in society. The researchers asked people whether they thought most foods was either good or bad. 40% of people in the study sample agreed. People tend to dichotomize foods as either good or bad for you. Most think of "good food" as being low in calories and high in nutrients, whereas "bad food" is high in calories and low in nutrients.
